T-mobile finally has the v8 for sale on their website, $249 with contract. I believe it's a 2GB model.

Has anyone tried opera mini (on the v8 )?

Mapping software? (i.e. google) Any with support for a bluetooth GPS?

Any comments on how good java implementation is?

Opera mini works fine and so does google maps... I have not tried any bluetooth receiver yet so maybe someone else can chime in on that.

I would not worry much, the java is the same as all other previous phones. All your java applications should work fine.
