There are a few problems that will make things rather difficult...
1. On top of Linux, which is fairly standard, Motorola built custom apps and drivers to control the actual phone part. Those will need to be reverse-engineered (because you most likely won't get them from Motorola).
2. The firmware flash procedure on the E680 is not documented. I'm guessing it's just a matter of time before someone finds out how to flash it though.
If both of those issues are overcome, people can start thinking about an OE build for the E680.
The platform, based on XScale, is very much alike with the Zaurus series. Most binaries will probably run fine on both machines. But unless someone finds out how the phone part work, your E680 isn't going to be much more than a PDA if OE runs on it.
